Baby Spinach Salad, Cherry Tomatoes, Blueberries, Red Onions

6 or 7 cups of baby spinach
1 small red onion quartered and sliced into strips
1 pint cherry tomatoes, stemmed sliced
1 1/2 cup fresh blueberries
1 cup Tosteds

Fill a large salad bowl with the spinach and layer the onions, tomatoes and blueberries, topping with the Tosteds.

Light and Lovely Cilantro Macadamia Dressing

1/3 cup macadamia nut oil
1/3 cup rice vinegar
2 tablespoons red wine vinegar
1/4 cup fresh orange juice
1 clove garlic
2 Tablespoons nutritional yeast
1 Tablespoon agave
1/2 Tablespoon dried cilantro

Place ingredients in the order listed in a small personal blender and blend to emulsify.
