Who doesn’t love a gorgeous glazed bundt cake? The sheer volume of most bundt cakes make the choice all the more worthwhile. This luscious cake is filed with apple chunks and cranberries, topped with a sweet lemon glaze and calls for Fuji apples. Fuji is a variety that is large, firm and crisp, which makes them perfect for baking.

Racquetball Champion Hosts Vegan Bar Mitzvah at Veggie Grill

Cody Elkins, a 13 year old student at Paul Revere Middle School in Los Angeles was not the usual Bar Mitzvah candidate. Cody was the second in his in is family to cerebrate this important milestone at Veggie Grill, a growing fast, casual vegan restaurant chain.

Scott Nicholson, Senior Vice President of Operations helped Cody plan the party for 100 guests in late October and it was an enormous success.  Scott enlisted his staff to work the event, preparing Cody’s special customized menu, highlighting many of Veggie Grill’s greatest hits.  As a special treat, Scott brought back Cody’s favorite dessert, a luscious chocolate pudding parfait for his special occasion. Cody Elkins, Champion Athlete Invites 100 guests to his Vegan Bar Mitzvah

Cody Elkins is a 12 year old racquetball champion living in Southern California.  He the second child in his family to celebrate his Bar Mitzvah at Veggie Grill in Westwood. Veggie Grill is a fast-growing quick casual vegan restaurant chain operating in California, Oregon and Washington, set to open its 29th location in Chicago.

Cody is part of a vegan family of six that was vegetarian when he was born and went vegan when he was two. He has two older brothers Dane, 18 and Jaden 16 and a sister, Madison who is ten. Jaden had his vegan Bar Mitzvah at Veggie Grill three years ago; the guests were delighted and the Elkins’ family was thrilled with the response. Hanukkah, the winter festival of lights is celebrated by Jews around the world and begins this year when the first candle is lit at sunset on Saturday, December Twenty-Fourth.

An eight-day festival marked by the lighting of brightly colored candles commemorates the rededication of the Temple in ancient Jerusalem. The menorah is a candelabrum with nine branches in which a different candle is lit to mark each consecutive night, the primary ritual on Hanukkah.

The first candle, called the Shamus is taller than the rest and is used to light the remaining candles. One candle is lit the first night, two the second, three the third, and so on until all are lit on the eighth night.

Braised Tofu Sriracha and Sesame Linguine are complimentary in taste texture and eye appeal. In a marriage saucy spice and comfort food, this is perfect pairing for an intimate dinner or a scaled up for a dinner party.

Braising is a cooking technique that begins with browning the main ingredient. Seasonings, veggies liquid are added, and simmered over low heat in a covered pan.

A wonderful cooking method for tofu, tempeh, seitan and/or a wide variety of vegetables, braising does not require much attention after the main ingredient is browned. Double Your Pleasure With Delightful Apple Upside-Down Cake

The classic pineapple upside-down cake, glazed with pineapple rings and bright red maraschino cherries gained popularity in the early 20th century when canned pineapple was introduced. Tastes have changed over the last hundred years and canned pineapple dotted with uber adulterated maraschino cherries aren’t the kind of ingredients the health conscious cook would bake into a cake.

Upside-down style cakes can be crowned with just about any fresh fruit with delicious results. I like to use fruit that is a bit tart for the brown sugar topping and Granny Smith apples were the inspiration for this recipe. When in season, a pinwheel of nectarines, plums or fresh apricots or are all great choices and a sprinkling of blueberries is always a nice touch. Delectable Apricot Pastry Rolls ~ Four Ingredients!

These wholesome and delectable Apricot Pastry Rolls come together quickly with just four ingredients and keep well in a covered container in the refrigerator.

Puff pastry is light and airy with unique properties perfect in many elegant dishes on the party circuit. Easy to use and ready to bake, frozen puff pastry is undoubtedly the simplest route to an endless array of impressive dishes.

It is important to read labels. Some popular brands of puff pastry list unbleached enriched flour as the first ingredient. That is white flour with all of the bran removed, which then has some vitamins and minerals added back. It is best to avoid refined white, flour, bread and rice because they are empty carbs with all of the goodness discarded.

Most brands use lots of butter, which adds cholesterol, saturated fat and excess calories. Equally troubling are the hydrogenated oils and other additives listed on the label of the most popular brand of puff pastry. Hydrogenated oils are trans fats, which increase bad cholesterol (LDL) and decrease good cholesterol (HDL) and also promote inflammation.
