Salsa
8 Fresh plum tomatoes, large dice
2 cloves garlic, peeled
1 serrano chile, seeded
1/4 cup chopped cilantro
Pinch of sea salt
4 thinly sliced scallions
3 Tablespoons lime juice
GUACAMOLE
Three large avocados pitted and diced
2 cloves garlic
4 scallions, thinly sliced
pinch sea salt
pinch lemon pepper
1/3 cup salsa
3 Tablespoons lime juice
1/3 cup chopped cilantro

Soy Ground Beef Layer
1 1/2 teaspoon olive oil
1/2 cup chopped red onion
1/4 cup chopped green bell pepper
3 cloves garlic, minced
2 (12 ounce pkg.) soy ground beef
(1) 14 1/2 ounce can Mexican stewed tomatoes
1/4 cup tomato paste
1/4 cup Merlot or Burgundy
1 tsp ground cumin
1/4 cup chopped fresh cilantro
Black Bean Layer
1 1/2 tsp. olive oil
1/2 cup chopped red onion
1/4 cup chopped green bell pepper
1 clove garlic, minced
(2) 15 oz. cans black beans (drained)
6 Tbsp. tomato paste
1 1/2 tsp. ground cumin
1 teaspoon dried cilantro
dash cayenne

Dairy Free "Cheese" Sauce
1 (12.3 ounce pkg) lite silken tofu, extra firm
2 Tablespoons lemon juice
2 cloves garlic, peeled
1/2 cup enriched plain soymilk
1/3 cup nutritional yeast
1 teaspoon Bragg Liquid Aminos
1 (12 ounce package) baked tortilla chips
Make salsa:
Place tomatoes, garlic, chile, cilantro, salt, scallions, lime juice
in the Tribest Personal Blender (large cup) and pulse to mix. Set
aside.
Make guacamole:
Place half the avocados and peeled garlic in the Tribest Personal
Blender (large cup) and blend. Add to the diced avocado in a medium
bowl and combine with the lime juice, scallions, salt, lemon pepper,
1/3 cup of the salsa, and chopped cilantro. Set aside.
Make Soy Ground Beef Layer
Heat olive oil in a 10" frying pan 30 seconds over medium high
heat. Add onions, green bell pepper, and garlic. Saute 3 minutes.
Add soy ground beef, stir cook 5 minutes, and add Mexican stewed
tomatoes. Stir in tomato paste Merlot or Burgundy and add ground
cumin and cilantro.
Make Black Bean Layer
Heat olive oil over medium high heat in a medium saucepan for 30
seconds, add onions, green bell pepper, garlic, and beans. Stir
in tomato paste and add bay leaf, cumin, cilantro and cayenne.
Make Dairy Free "Cheese" Sauce
Place tofu in Tribest Personal Blender and blend until smooth.
Combine tofu in a medium saucepan with lemon juice over medium heat.
Chop garlic in Tribest Personal Blender and add to the pan with
soymilk, nutritional yeast and liquid aminos. Reduce heat to low
and simmer until ready to assemble, stirring occasionally.
Assembly:
Preheat oven to 350°
Place the tortilla chips along the bottom of a 2 inch deep oven
safe pan. Cover the chips with the soy ground beef layer. Add the
bean layer, and top with the dairy-free cheese sauce. Bake 20 minutes,
or until heated through and bubbly. Garnish with salsa and quacamole.
